What to do with a pork steak and spaghetti sauce?

Aaaahhh, I can smell it, Spring, bbq season, baseball- summer is getting closer and closer.  As a teacher, this is very important :)  We had a fabulously busy Easter weekend.  What great fun we had celebrating Christ's ressurection with friends and family.  However, we now have many leftovers.  Here's a recipe using a leftover pork steak.  The pork steak I used was huge!  If you don't have a huge pork steak, use two small ones.  It's a great recipe for after grilling; we always end up with one or two pork steaks leftover!  This solves the problem of what to do with them in a new, delicious and very easy way.


Stuffed Pasta in a Pork Sauce
Ingredients:
1 Large Pork Steak
4 TBSP Creme Fraiche
1 and 1/2 Jars of Spaghetti Sauce
3 Bags of Stuffed Pasta (I used tortellini, ravioli and stuffed mostacolli)

1. Cut up pork steak into bite-sized pieces.  Put into a large soup pot.
2. Pour spaghetti sauce and creme fraiche in with your pork.  Stir.
3. Cook until warm and bubbly.  Keep on low until ready to mix with pasta.
4. Boil a large pot of water.  Cook all pastas together according to the directions on their bags. 
5. When finished, combine pasta and sauce.  Serve with a side of parmesean cheese.

** This recipe serves 6 to 8 people.

What to do with leftover baked beans?

I made a huge pot of baked beans at our bbq this weekend because I love them and I knew I could make something with them for What's for Leftovers. Last night we had my brother, neice and dad over for dinner. Michael (my brother) brought a pizza along "just in case". Up until last night, he had never had Sloppy Joes that he liked. He ate two sandwiches during dinner, so I don't think he feels that way anymore. Homemade Sloppy Joes are so easy to prepare. You don't need that mix that they sell at the store to make them really tasty. You just need a few ingredients that I'm willing to bet you already have in your kitchen. We put ours on buns with cheese slices, mmmm, tasty!





Deluxe Sloppy Joe
Ingredients:
1 lb Hamburger Meat
1/2 Cup Steak (Optional or add more if you have more)
1 1/2 Cups Baked Beans
1/2 Cup BBQ Sauce
1 Can diced tomatoes
1 TBSP Ketchup
1/2 TBSP Mustard


1. Brown hamburger meat in a large frying pan and drain fat.
2. Add steak, baked beans, tomatoes, bbq sauce, ketchup, and mustard. Mix all together.
3. Cook on medium until sauce thickens up. Make sure you keep stirring so the bottom won't burn. Put on buns and top with cheese.

What to do with leftover ground turkey and steak?

Hi all!  I am so blessed to get to stay home with Celia and Charlie two days during the week.  Even on the craziest days, I love it.  Today was one of those days!  So when Andy walked in the door tonight, I was happy to turn our two little hoodlums over to him to start cooking.  My brother gave me a filet mignon that he had leftover from the other night when he bar-b-qued and I had some ground turkey leftover from our pizza pie.  I made these into Fajita Style Nachos.  They were delicious and would be great for a Super Bowl Party!  Comer con gusto!

Fajita Style Nachos

Ingredients:
1/2 Large Onion- Chopped
1 Large Green Pepper- Chopped
1/2 Packet Taco Seasoning
2 Cups Cooked Chopped Meat (I used 1 cup filet mignon and 1 cup ground turkey)
1 Can Beans- Drained (I used small white beans)
1 TBSP Dried Cilantro
1 TBSP Minced, Refrigerated Garlic
Tortilla Chips
1 Cup Shredded Cheese
Sliced Black Olives
Sour Cream
Salsa
Jalapenos (optional)

Spray a large frying pan with no stick cooking spray.  Add onions and green peppers to the pan.  Add 3/4 cup of water to the pan.  Next add taco seasoning and saute until peppers start to turn bright green and onions are becoming translucent.  Add meat, beans, cilantro and garlic to the pan.  Cook until very little liquid remains.  Heat oven to 350 degrees.  Spray a large baking sheet with a rim (so the beans and meat won't fall all over your counter).  Spread out a heavy layer of tortilla chips onto the baking sheet.  Spoon meat and bean mixture all over the chips.  Sprinkle shredded cheese on top of the meat and beans.  Cook in the oven until cheese is completely melted.  Add black olives, sour cream, jalapenos and salsa when serving.

What to do with left over pork steaks and turnips?

My dad owns his own business and has made friends with people who regularly come into "the shop". One of these customers is a farmer. He brings my dad boxes of fruits and vegetables and my dad hands them out to us, his family and friends. This is how I came to be the proud owner of about 15 turnips. I have quietly been adding them to all kinds of dishes: quiche, apples and tonight chili! Nobody ever notices. To make the chili extra special, I also used some left over pork steaks. It was a hit- my husband ate two bowls. I'm sending the rest of it to "the shop" tomorrow for lunch. Hopefully they'll like it just as much as Andy.

When cooking, I don't always use measuring spoons and cups. I'm definitely an eye-baller and a taste and add more kind of person. From now on, I'll be more diligent about measuring how much of everything I add.

Ingredients:
3 to 4 Leftover Pork Steaks cut up in small pieces
1/2 Green Pepper Chopped
1/2 Large Red Onion Chopped
1 Can Black Beans
1 Can Chili Beans
1 Can Diced Tomatoes
1 Cup Water
1 Turnip chopped into very small pieces (Optional)
1/2 Cup Spaghetti Sauce
1/4 Cup of BBQ Sauce
1 TBSP of Minced Garlic
1 TBSP of Taco Seasoning
2 Packs Taco Bell Mild Sauce
Chili Powder to taste
Ground Cumin to taste
Dried Cilantro to taste
Salt to taste

Shredded Cheese (I used Colby)
Tortilla Chips (Mine were stale, so I heated them up in the oven to crunch them up.)

Mix all ingredients except shredded cheese and tortilla chips in a slow cooker. Cook on high for 3 hours. You will want to make sure that the turnips, green peppers, and onions are cooked thoroughly. If you would like your chili thicker, take out 1/2 cup of the liquid after everything's finished cooking. Mix it together with 1/4 cup of flour to make a paste. Pour this paste into the chili, let it cook until it thickens up.

Top each bowl off with tortilla chips and shredded cheese. Enjoy!
